Here's how to make Masala Dosa Indian style:

Ingredients for Dosa Batter:
- 1 cup rice
- 1/2 cup urad dal (split black gram)
- 1/2 tsp fenugreek seeds
- Water for soaking
- Water for grinding
- Salt to taste

Ingredients for Potato Masala:
- 3-4 large potatoes, peeled and cubed
- 1 onion, chopped
- 2 green chilies, chopped
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- A few curry leaves (optional)
- A pinch of asafoetida (optional)

Instructions:

1. Soak the rice, urad dal, and fenugreek seeds in enough water to cover them overnight.

2. Drain the water and grind the soaked rice, urad dal, and fenugreek seeds in a blender or food processor, adding enough water to make a smooth batter. The batter should be of pouring consistency but not too thin.

3. Add salt to taste to the batter and mix well. Allow the batter to ferment overnight or for at least 6-8 hours in a warm place.

4. To make the potato masala, heat oil in a pan over medium heat.

5. Add mustard seeds, cumin seeds, and asafoetida (if using) and let them splutter.

6. Add chopped onion, green chilies, and curry leaves (if using) and sauté until the onions are soft and lightly browned.

7. Add cubed potatoes, turmeric powder, red chili powder, and salt to taste. Mix well.

8. Add enough water to just cover the potatoes, cover the pan, and cook until the potatoes are soft and tender, stirring occasionally.

9. Once the potatoes are cooked, mash them lightly with a potato masher or fork.

10. Heat a non-stick tawa or griddle over medium-high heat.

11. Pour a ladleful of dosa batter onto the tawa and spread it in a circular motion using the back of the ladle to make a thin dosa.

12. Drizzle a little bit of oil or ghee (clarified butter) on the edges of the dosa and cook until the underside is golden brown and crisp.

13. Add a spoonful of potato masala in the center of the dosa.

14. Fold the dosa in half to cover the potato masala and serve hot with chutney or sambar. Repeat the process with the remaining batter and potato masala.
