Here's how to make Seafood paella, Spain style:

Ingredients:
- 2 cups Spanish bomba rice (short-grain)
- 1 lb assorted seafood (such as shrimp, mussels, calamari, and clams)
- 1 onion, chopped
- 1 red bell pepper, chopped
- 4-5 cloves garlic, minced
- 4 cups chicken or seafood stock
- 2-3 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp saffron threads
- Salt and black pepper to taste
- Lemon wedges for serving

Instructions:

1. Heat olive oil in a large paella pan over medium heat.

2. Add chopped onion and red bell pepper and sauté until they are soft and lightly browned, stirring frequently.

3. Add minced garlic and sauté for another minute until fragrant.

4. Add Spanish bomba rice to the pan and stir until the rice is coated with oil and toasted, about 2-3 minutes.

5. Add smoked paprika and saffron threads to the pan and stir until fragrant.

6. Pour chicken or seafood stock into the pan and stir to combine. Season with salt and black pepper to taste.

7. Bring the mixture to a gentle simmer and cook for about 10 minutes, stirring occasionally.

8. Add seafood to the pan and arrange it on top of the rice.

9. Cover the pan with a lid or aluminum foil and cook for another 10-15 minutes or until the rice is tender, the seafood is cooked through, and the stock has been absorbed.

10. Remove the lid or foil and let the cooked paella rest for a few minutes before serving.
