Ingredients:
- 3 lbs. boneless chicken breasts
- 1 medium onion, finely diced
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp smoked paprika
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp dried thyme
- 1/4 tsp dried oregano
- 1/2 cup chicken broth
- 1/2 cup apple cider vinegar
- 1/2 cup tomato sauce
- 1/4 cup mustard
- 1/4 cup honey
- 6 Kaiser rolls or buns, split
- 6 slices of Swiss cheese
- 1/4 cup sliced pickles
- Sauerkraut (optional)

Sauce
2 teaspoons canola oil
½ cup finely chopped onion
1 tablespoon dark brown sugar
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon dry mustard
¼ teaspoon ground allspice
⅛ teaspoon ground red pepper
1 cup ketchup
2 tablespoons cider vinegar

Instructions:

1. In a slow cooker, combine the chicken breasts, onion, garlic, paprika, smoked paprika, salt, pepper, cayenne pepper, dried thyme, dried oregano, chicken broth, apple cider vinegar, tomato sauce, mustard, and honey.

2. Cover the slow cooker and cook on low for 6-8 hours or until the chicken is tender and easily falls apart.

3. Once the chicken is cooked, shred it and let it sit in the sauce for a few minutes to absorb the flavors.

4. Toast the Kaiser rolls or buns and lay slices of Swiss cheese on them.
